There’s nothing better than some home style chips on a dull day. There’s a crispy breadcrumb coating and they would be perfect to accompany with a burger for an American style dinner. This is a healthy alternative to potato chips and gluten free as well. I especially enjoyed the creamy dipping sauce with the zesty lime and refreshing garlic. Cashews are a great alternative for cream for you vegans out there giving it the vivid white colour and creamy texture.
The preparation time sounds daunting but don’t let this put you off as 1 hour of this includes the polenta setting in the fridge. This dish is extremely easy to make and leaves you feeling full and satisfied from your junk food cravings.
Polenta Chips 1 hr- 10 mins prep 30-45 min Cook time @ 200ºc
600ml hot water
1 stockcube
150g Polenta/ Cornmeal flour
1 tsp garlic powder
1 tsp Mixed Herbs
Breadcrumbs
Stale-ish bread – I used some gluten free chia seed loaf I made a week earlier.
Cashew Cream Garlic and Chive dip
Handful of soaked Cashews
4 tbsp Water or milk alternative
2 garlic cloves
1/2 a lime
Salt & Pepper to taste
1 tsp Fresh Chives chopped finely (if you want a garlic & chive dip)

- Allow your cashews to soak in some water while you do the next steps (overnight would be ideal).
- Bring the 600ml of water to boil with your stock cube and herbs, then bring down to low heat and slowly add the polenta flour. Whisking as you go along to stop clumps and stir for about 5 minutes.
- Grease a baking pan and add the hot polenta mix to the tray. You now want to let this set in the fridge for about 1 hour.
- Now make the breadcrumbs by cutting some bread into chunks and then blend on pulse followed by constant speed until it’s a fine texture.
- Once you’ve patiently waited, pre-heat the oven to 200º, take the polenta chunk out of the fridge and cut into chip sized shapes. I wiped the chips in the oil on the tray before dipping into the breadcrumbs.
- Cook for 30-45 mins or until the outside is brown & crispy and the inside has a potato chip like softness.
- While you’re waiting for the chips to finish create your creamy dip by draining the cashews and combining all ingredients in the blender. Blend until smooth.
- Serve the chips and dip in some quirky bowls for a delicious side.
